The subjective of the proposed project is the determination of relationships between complex rheological parameters (measured with use of rotational rheometry) and textural attributes (measured by sensory analysis). The main scientific contribution is the complex and systematic investigation of the above relationships, which has not yet been achieved in such an extent. The results would enable conclusions concerning the complex characterization of texture and thus the uses of emulsions in practical applications.
