Psychorheology of multiphase emulsion systems

In the proposed project multiphase (dispersion) emulsion systems will be studied. Relations between complex rheological parameters (measured with use of rotational rheometers) and textural attributes (measured by sensory analysis) will be determined. The knowledge of psychorheological laws is very important for the quantitative description of flow and deformation phenomena, taking place during sensory tests. On the basis of these laws, the subsequent instrumental analysis may be effected under rheologically comparable conditions. The main scientific contribution is the complex and systematic investigation of the above relationships, which has not been achieved in such an extent. The results would enable conclusions concerning the complex characterization of texture and thus the uses of multiphase emulsion systems in industrial applications.
